Concentrated, lyophilized milk starter culture for direct vat inoculation (DVI ®) is ideal for making semi-hard cheeses such as Gouda and fresh cheese, such as cream cheese, soft cheese, pickled cheese, Imeretian, Georgian, cottage cheese.


This culture has the property of producing aroma and CO2.

Natural mesophilic culture, listed in descending order:

  • Lactococcus lactis subsp. lactis
  • Lactococcus lactis subsp. cremoris
  • Lactococcus lactis subsp. lactis biovar diacetylactis
  • Leuconostoc mesenteroides subsp. cremoris


Recommended dosage:

  • 1U for 100 liters of milk
