CYEX culture is primarily recommended for whipped yogurt, recommended for thick yogurt, and also recommended for drinking yogurt.
Composition:
- Streptococcus salivarius subsp. thermophilus
- Lactobacillus delbrueckii subsp. bulgaricus
Properties
Contains certain mixed strains for efficient, reliable, controlled and reproductive development. The CYEX culture contains exopolysaccharide producing strains that provide a medium mouthfeel and high gel stability. The optimum growth temperature is 37°-43°C. Temperature
The temperature depends on the application of the starter. CYEX can be used at temperatures between 37°C and 43°C.
