Lyophilized starter concentrate for direct inoculation into a vat of milk and milk bases. CSTV the culture is mainly used in the production of pasta filata cheese, fresh mozzarella, soft cheese: Argentine port salut.

Properties


Contains certain mixed strains for efficient, reliable, controlled and reproductive development. The optimum growth temperature is 37°-43°C. The strains included in the range have been selected for their rapid acidification.


Temperature


The temperature depends on the application of the starter. CSTV can be used at temperatures between 32°C and 43°C.
