During cultivation, their cell walls are enriched with polysaccharides, mannoproteins, and sulfur-containing peptide compounds, including glutathione.
Nutrition for wine fermentation contributes to increasing both the chemical and physical stability of wine. The product reduces the risk of oxidative changes and supports preservation of the aromatic profile during storage.
