The product is a pectolytic complex focused on intensive extraction of anthocyanins and phenolic compounds at the crushing stage. The destruction of pectin and colloidal structures of the cell wall contributes to a more complete release of coloring components and increases the efficiency of mash pressing.
Enzyme for red wines is thermostable and demonstrates the highest activity in the range of 58–64 °C, with an allowable temperature increase up to 68 °C. This makes it possible to integrate it into processes with thermal treatment of raw materials without loss of efficiency. Enzyme for thermovinification contributes to clarification of must and wine by reducing colloidal load and improving filterability.
The recommended dosage is 2–5 g/hl depending on the characteristics of the raw material and the required degree of extraction.
