The product with pectolytic activity is intended for the breakdown of pectin compounds. Enzyme for white grape maceration promotes more complete juice separation and increased product yield. Treatment of white and rosé mash allows reducing the duration of pressing and carrying it out in a gentler mode, reducing mechanical load on the raw material.
