The product is a pectolytic complex focused on intensive extraction of anthocyanins and related phenolic compounds. The breakdown of pectin structures of cell walls contributes to a more complete release of coloring and aromatic components, increasing the color intensity and structure of the future wine.
Enzyme for maceration of red varieties is also suitable for thermovinification technologies where accelerated and controlled extraction at elevated temperatures is required. Additionally, it can be used for clarification of red and white must when added to juice after pressing.
