APRO-FERM FRESH FRUIT ANAX yeast is excellent for effective fermentation of young fruit wines. It ensures high-quality production while preserving the pronounced grape aroma – fruity, berry, floral, and others. It is best to use yeast for enhancing the fruit profile for fermentation at a temperature of 15–22 °C.
Our professional yeast for fresh wine styles has proven itself well in the production of light drinks with a short aging period. Such wines include Pinot Noir, Merlot, Beaujolais Nouveau, and some other varieties. Wine yeast for fruit wines has been developed taking into account practical testing and based on feedback from winemakers.
Selected yeast for aromatic fermentation has high alcohol tolerance up to 14.5% vol. This allows it to be used in the production of medium-strength wines. During fermentation, the formation of hydrogen sulfide (H2S) is excluded, therefore the yeast ferment does not affect the aromatic composition of the finished drink in any way and preserves its naturalness and richness. Be sure to follow the dosage instructions indicated on the product packaging.
