APRO-FERM CHAMP is a yeast strain intended for the production of sparkling wines using both the traditional (bottle) method and the tank (Charmat) method.
The yeast contributes subtle nutty notes to the aroma profile. It is resistant to low pH values and high concentrations of CO2, and is cold-tolerant.
- Alcohol tolerance: up to 15.0% vol.
- Optimal fermentation temperature: 14–22 °C.
