APRO-FERM CHAMP ANAX yeast is suitable for producing champagne using the traditional or tank method. They ensure high-quality fermentation, and thanks to them the drink acquires a subtle nutty aroma.
Yeast for sparkling wines is characterized by the following features:
- high alcohol tolerance, thanks to which APRO-FERM wine yeast continues fermentation at an ethyl alcohol concentration of up to 15%;
- cost efficiency – to achieve the desired result, it is enough to add 5 grams of yeast strain per 20–25 liters of must;
- stability – fermentation continues even at a low pH level (acidity) and increased CO2 content.
Professional ANAX wine yeast contributes to the formation of an exquisite sparkling drink at a temperature of 14–22 °C.
