Natural standardized preparation of enzymes. Derived from  extraction of the fourth part of the stomach of selected calves. The content of pure veal chymosin is more than 95%. High enzymatic activity of the  preparation. The enzyme is very thermolabile, which eliminates the possibility of bitterness in the cheese during its ripening and storage.
